Functional Summary
 
A Night Cook Baker is assigned to a large camp by the Scheduling Services Staff as needed and bakes a wide variety of pastries and breads, prepares for the breakfast meal and provides direction to kitchen staff.  Duties include meal preparation, baking, administrative tasks, safety and teamwork.
 
Key Responsibilities
 
The responsibilities of a Night Cook Baker include, but are not limited to:
 
Baking

  • Cuts and forms doughs
  • Prepares fillings
  • Bakes breads, rolls, muffins, pies, pastries, cakes and cookies for each meal daily
  • Prepares batters from scratch
  • Frosts and decorates cakes and other baked goods
  • Portions baked goods
Meal Preparation
  • Pre-breakfast preparations and breakfast short-order services
  • Cooks and serves breakfast, night meals and rig boxes
Administrative Tasks
  • Supervises night shift staff
  • Responds to client and staff inquiries or complaints and resolves problems
  • Estimates baking and food requirements
  • Unpacks and stores baking supplies in refrigerators, cupboards and other storage areas
  • Ensures cleanliness of kitchen and dining area
  • Maintains baking inventory and records of food, supplies and equipment
  • Enforces PTI policies and procedures
Safety
  • Participates, accepts and adopts the safety principles described in the PTI Group Inc. safety program
  • Has a complete understanding of WHMIS applies this knowledge in day to day work
  • Works in a safe and responsible manner
Teamwork
  • Participates as an integral member of a team
 
Work Conditions
  • A Night Cook Baker will work primarily in a remote camp location with a ten hour work day on a standard three week contract.
  • Is able to bend, lift items weighing up to 50 pounds and stand for long periods of time.
Qualifications
 
Education:
  • Red Seal Certification or completion of college or other program in baking preferred
Work Experience: 
  • 3+ years food service experience as a Baker or Cook preferably in a remote camp environment
Technical Knowledge:
  • Advanced Food Safe Certification,
  • WHMIS and First Aid certification preferred
