The Position
 
We are currently hiring for our Fire Camp Season; there are a limited number of positions available and those with previous Fire Camp or Wild Fire experience would be preferred.  More opportunities will be available in the Winter Season.
 
A Rig Cook is assigned to specific camps by the Placement Staff as needed.  A Rig Cook is palced in a camp of app. 20 people and is responsible for responding to the special requests and complaints of our clients, while ensuring the smooth camp operation and management of staff. 
 
Role and Responsibilities
 
Duties include providing quality customer service, preparing meals and cooking, baking a wide variety of foods, developing menu plans, controlling inventory, placing grocery orders, supervising and training staff, kitchen and dining room maintenance, administrative tasks, safety and teamwork.
 
The responsibilities of a Rig Cook include, but are not limited to:
 
Customer Service

  • Responds to client and staff inquiries
  • Addresses complaints and resolves problems professionally and diplomatically
  • Ensures that enough food is served to clients on a daily basis to meet their appetite
Meal Preparation and Cooking
  • Cleans, peels, slices and trims foodstuffs using manual and electric appliances
  • Prepares, seasons and cooks foods such as meat, fish, gravies, vegetables, desserts, sauces and casseroles
  • Carves meats
  • Prepares steam tables
Baking
  • Cuts and forms doughs
  • Prepares fillings
  • Bakes breads, rolls, muffins, pies, pastries, cakes and cookies for each meal daily
  • Prepares batters from scratch
  • Frosts and decorates cakes and other baked goods
  • Portions baked goods
Menu Planning
  • Creates menus that appeals to the palates and dietary requirements of our clients
  • Utilizes available grocery items effectively to minimize food wastage
Inventory Control
  • Maintains inventory and records of food, supplies and equipment
  • Orders stock and rotates groceries using First In First Out method (FIFO)
  • Unpacks and stores supplies in refrigerators, cupboards and other storage areas
  • Performs inventory weekly, at year end on November 30, when moving camp or shutting a camp down
Grocery Orders
  • Calculates the amount of grocery needed to feed clients for a specific period, based on the menu planned
  • Estimates food requirements and costs accurately
  • Ensures ten days of food is on hand at all times
  • Places grocery order that meets the needs and that minimizes the use of “hot shots”
Staff Management
  • Schedules and supervises camp staff, which includes a Cook, Camp Attendant and General Helper
  • Provides honest feedback and appropriate discipline to staff when necessary
  • Trains and guides staff properly
  • Ensures staff complies to established PTI policies and procedures
  • Treats staff with respect and dignity
Kitchen and Dining Room Maintenance
  • Ensures kitchen and dining area is clean, tidy and organized at all times
Administrative Tasks
  • Receives and submits staff time sheets on a timely basis
  • Reports all accidents and injuries and performs Field Level Risk Assessments (FLRA)
  • Completes Incident/Injury Reports accurately, as needed
  • Conducts weekly safety meetings and take minutes
  • Conducts daily tailgate meetings
  • Marks and submits Weekly Meal Record and ensures third party meals are accounted for
  • Monitors and tracks meal temperatures during meal service, fridge and freezer temperatures and steam table temperature before each meal on Temperature Log
Safety
  • Participates, accepts and adopts the safety principles described in the PTI Group Inc. safety program
  • Has a complete understanding of WHMIS applies this knowledge in day to day work
  • Works in a safe and responsible manner
Teamwork
  • Participates as an integral member of a team
Work Conditions
  • A Rig Cook works primarily in a remote camp location with a ten hour work day. 
  • Flexibility to work over time may be needed, on a standard three week contract
Qualifications
 
Education:
  • High school diploma (preferred)
Work Experience:
  • 4+ years of food service experience as a Cook and Baker preferably in a remote camp environment
  • WHIMIS, Alberta Standard First Aid, Food Safety an asset
  • The successful candidate must be able to transport themselves to Edmonton.
