The Position
 
A 1st Cook is assigned to a large camp by the Placement department as needed and cooks a wide variety of foods, develops meal plans, inventory and grocery orders, provides direction to kitchen staff, and ensures the highest quality of food and baking possible.
 
Duties will include meal preparation, supervisory tasks, inventory, administrative tasks, safety and teamwork.  The 1st Cook works in a friendly and efficient manner with the client to manage special requests and complaints while ensure the smooth working order of the camp and its staff. 
 
Key Responsibilities

  • Cleans, peels, slices and trims foodstuffs using manual and electric appliances
  • Prepares, seasons and cooks foods such as meat, fish, gravies, vegetables, desserts, sauces and casseroles
  • Carves meats
  • Prepares steam tables
  • Prepares special diets
  • Makes soups from scratch
  • Responds to client and staff inquiries or complaints and resolves problems
  • Schedules and supervises kitchen staff
  • Enforces PTI policies and procedures
  • Participates in tailgate meetings
  • Ensures cleanliness of kitchen and dining area  
  • Ensures ten days of food is on hand at all times
  • Maintains inventory and records of food, supplies, equipment and costs
  • Orders stock and rotates groceries using First In First Out method (FIFO)
  • Unpacks and stores supplies in refrigerators, cupboards and other storage areas
  • Performs inventory weekly, at year end on November 30, when moving camp or shutting a camp down
  • Receives and submits staff time sheets
  • Reports all accidents and injuries and fills out a Field Level Risk Assessments (FLRA)
  • Fills out Incident/Injury Reports, as needed
  • Marks down meal temperatures during meal service, fridge and freezer temperatures and steam table temperature before each meal on Temperature Log
  • Participates, accepts and adopts the safety principles described in the PTI Group Inc. safety program
  • Holds weekly safety meetings and take minutes
  • Has a complete understanding of WHMIS applies this knowledge in day to day work
  • Works in a safe and responsible manner
  • Participates as an integral member of a team
Additional Information
 
A 1st Cook will work primarily in a remote camp location with a ten hour work day and is flexible to work over time, as needed, on a standard three week contract. Is able to bend, lift items weighing up to 50 pounds and stand for long periods of time.
 
Qualifications
 
Education:
  • Red Seal Certification or completion of college or other program in cooking preferred
Work Experience:
  • 4+ year's food service experience as a 1st Cook preferably in a remote camp environment
Technical Knowledge:
  • Advance Food Safe Certification,
  • WHMIS and First Aid Certification preferred
