The Position
 
The responsibilities of a 2nd Cook / Cook's Helper include, but are not limited to:
 
Meal Preparation

  • Makes four to six selections of salad for lunch and supper daily
  • Prepares sandwiches for bagged lunches using a variety of fillings and breads
  • Cuts vegetables, wraps pastries and has other snack items readily available
  • Cleans, peels, slices and trims foodstuffs using manual and electric appliances
  • Assists 1st Cook/Chef with meal preparation as directed
Kitchen Maintenance
  • Replenishes condiments and other supplies at tables and in dining area
  • Prepares and serves clients at steam tables, as needed
  • Ensures meal sheets are signed off on after each meal by all individuals
  • Portions and wraps food for delivery to clients in a rig-box
  • Rotates fruits, vegetables and other groceries using the First In First Out method (FIFO)
  • Assists with inventory and records of food, supplies and equipment
Cleaning
  • Maintains general cleanliness of kitchen and dining area
  • Cleans and maintains rig-box inventory
  • Washes dining room tables, chairs, cupboards and appliances
  • Removes trash and disinfects containers
  • Sweeps and mops floors, as needed
  • Washes dishes, glassware, flatware, pots and pans using dishwasher or by hand using 3-sink method
Safety
  • Participates, accepts and adopts the safety principles described in the PTI Group Inc. safety program
  • Has a complete understanding of WHMIS applies this knowledge in day to day work
  • Works in a safe and responsible manner
Teamwork
  • Participates as an integral member of a team
Work Conditions
  • A 2nd Cook works in a remote camp location and is flexibility to work over time, as needed, on a standard three week contract.
  • Is able to bend, lift items weighing up to 50 pounds and stand for long periods of time.
Qualifications
 
Education:
  • Prefer completion of a apprenticeship program for cooks or other program in cooking
Work Experience:
  • 2-3+ years food service experience as a 2nd cook preferably in a remote camp environment
